Texture
Fine crystals give a smooth, creamy feel. It is soft enough to spread straight from the jar and firm enough to stay where you put it. Cream honey is a texture rather than a flower, so it tastes of the honey it is made from. Because it is already set, it does not drip from the knife or soak straight through the toast.
How it behaves
Warmth softens it. A jar left near a stove or in a sunny window can loosen and lose some of its smoothness. Protect from direct sunlight. After opening, store in a cool and dry place. Use a clean, dry knife each time.
Questions
Why is it so smooth?
The crystals are very small. Larger crystals feel grainy, and small ones feel creamy.
Can I stir it into tea?
Yes. It dissolves like any honey. It is simply easier to spoon and to spread.
I prefer liquid honey. Which should I try?
Linden honey and meadow honey are both usually liquid when fresh.
Can I bake with it?
Yes. It melts into batters like any honey. Honey browns faster than sugar, so check the oven early.
