A different jar every year
Meadow honey takes its character from whatever is in bloom while the bees are working. Early flowers, late herbs and the weather all leave a mark, so colour and taste shift a little from season to season. That variation is part of what meadow honey is.
In the jar
Usually light to amber in colour, with a floral, sometimes fruity aroma and a rounded sweetness. It is liquid when fresh and may set over time.

- In a vinaigrette with olive oil, mustard and a little lemon juice.
- Spread on a slice of dark rye with a little butter.
Questions
Is meadow honey the same as wildflower honey?
The two names usually describe the same thing: honey from a mix of flowering plants rather than one.
Why has my jar turned cloudy and thick?
Honey sets naturally, and meadow honey may do so over time. Stand the jar in warm water, below 40 °C, until it loosens.
Which honey is milder than this?
Linden honey is typically fresher and more delicate, with a minty, woody note.
Keeping it
Protect from direct sunlight. After opening, store in a cool and dry place.
